Tomato Soup

Serves 6 people


Ingredients

  • Cherry Tomatoes

  • Vine Tomatoes

  • Carrots

  • White Onions

  • Garlic

  • Vegetable Stock

Preparation

  1. Clean and Peel Vegetables.  Slice Vine tomatoes in half, and peel skin off carrots, and chop in half.   Cut whole onions into one 4 quarters.

  2. Arrange chopped Carrots, Onions, Vine, Cherry Tomatoes, and Garlic Cloves on a baking pan. 

  3. Drizzle Olive Oil and sprinkle Sea salt over the vegetables.

  4. Roast vegetables in the oven at 350 degrees for 25 minutes or until tender. 

  5. Place vegetables into a blender and add 1½ cup of vegetable stock. Blend until smooth puree.

  6. Pour soup into a pot and heat thoroughly on medium heat. 

  7. Serve in a bowl and enjoy!

Tips

Soup pairs well with garlic bread and a grilled cheese sandwich.
